Ever since owner Lauren Gauthier was a little girl—waiting in long lines in the Louisiana heat for an icy treat—she has dreamed of owning a snoball stand of her own. Even after leaving Louisiana for college, Lauren never went a single summer without a snoball. In July 2019, Lauren and her wife Cassie decided to say goodbye to their beloved New Orleans and move back to Cassie’s hometown of Portland, Maine. Feeling nostalgic and stumbling upon the perfect little food truck for sale, Lauren decided to open Little Easy Snoballs. With “Lil’ Easy” (as the remodeled mail truck is called), she blends the traditional tastes of New Orleans with local Maine flavors to bring a truly unique shaved ice treat to the streets of Portland.
